Healthy Summer Pasta Salad

This summer while you are heading off to all your BBQ's you can bring this healthy summer salad. This recipe is super easy and substituting some of the mayo for greek yogurt makes this recipe healthy (not to mention all the veggies!)



What you need:


1 zucchini
2 packages of grape or cherry tomatoes
1 package of elbow pasta (I used a new veggie pasta- by Healthy Eating where the pasta is made from veggies!)
1/2 cup red onion
7 tablespoons mayo (I used low fat made from olive oil mayo)
2 tablespoons greek yogurt (plain)
2 1/2 tablespoons red wine vinegar 
2 teaspoons dijon mustard
1/4 teaspoon oregano 
1/4 teaspoon garlic powder
salt and pepper


What to do:


Cook the elbows as directed- when they are done drain them and rinse with cold water


Mix the mayo, red wine vinegar, yogurt, dijon mustard, oregano, garlic powder, and salt and pepper in a large bowl. 


Cut up the veggies (tomatoes in half, zucchini in fourths, chopped onion) and slowly mix them into the pasta. Then mix in the pasta with the rest of the ingredients in the large pasta bowl.


Can be served right away or put in the fridge until later.
