Chipotle Chicken Salad

I love salads for dinner, and this one has it all! It is super flavorful and has tons of yummy veggies and with the chicken in it, it has protein as well. It is super healthy and easy to throw together. You could easily throw in other ingredients into this salad as substitutes.  Read the recipe after the jump!

Chipotle Chicken Salad:

1/3 cup chopped fresh cilantro
2/3 cup light sour cream
1 tablespoon minced chipotle chile, canned in adobo sauce
1 teaspoon ground cumin
1 teaspoon chili powder
4 teaspoons fresh lime juice
1/4 teaspoon salt
Mix all the ingredients together in a small bowl and set to the side.

delish dressing

1 bag shredded romaine lettuce
2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts)
1 cup cherry tomatoes, halved
1/2 cup diced peeled avocado
1/3 cup thinly vertically sliced red onion
1 can black beans, rinsed and drained
1 can whole-kernel corn, rinsed and drained
Cut up the veggies and combine all the ingredients together in a large salad bowl.

Slowly mix the dressing in.
