Simple Summer Pasta

The temperature is heating up and it makes me want to avoid heavy foods and concentrate on lighter, fresher, options. This pasta is great because it's healthy. delicious, and pretty simple to make!





You will need:

2 italian squash
chopped garlic (fresh or canned)
2 spring onions
cherry or grape tomatoes (chopped in half)
4 tsp olive oil
salt and pepper
crushed red pepper flakes
8 oz whole wheat spaghetti
1/4 cup fat-free chicken broth 
Parmesan cheese 

What to do: 

    Cook pasta according to directions
    While pasta is cooking, in a large saute pan, heat pan on medium, add olive oil when pan is hot. Add garlic and shallots to the pan and saute about 1 minute. Add zucchini and season with salt and pepper. Cook about 2 minutes, add tomatoes, crushed red pepper flakes, and chicken broth. Stir for another minute.

    Drain pasta when done and toss the pasta well with zucchini, serve with grated Parmesan cheese (optional).
