Crockpot Chicken Taco Chili

Last night I made some delish crockpot chicken taco chili. Now as you may have guessed by my many posts concerning Mexican food I love to eat and cook mexican dishes. This recipe is super easy and healthy! Basically all you do is dump and bunch of stuff in a crockpot and then put some cilantro on top when it's done! Seriously it's that easy...




I got this recipe from Skinnytaste.com but added and omitted a couple things based on my preferences.
Here is the run down of what you need:


Ingredients: 

  • 1 onion, chopped
  • 1 16-oz can black beans
  • 1 16-oz can kidney beans
  • 1 8-oz can tomato sauce
  • 1 can of corn kernels
  • 2 14.5-oz cans diced tomatoes w/chilies
  • 1 packet taco seasoning
  • 1 tbsp cumin
  • 2 tbsp chili powder
  • 24 oz (3-4) boneless skinless chicken breasts
  • 1/4 cup chopped fresh cilantro

Just dump in and enjoy!
Directions:
    Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours.  Top with fresh cilantro.
